Extempore 2019 Sauvignon DOC Collio Venica e Venica

Extempore 2019 Sauvignon DOC Collio: elegance and personality from Collio
Extempore 2019 Sauvignon DOC Collio by Venica & Venica is a white wine that combines typicity and refinement, offering an original interpretation of Sauvignon in the heart of Friuli Venezia Giulia. Born from an unusual winery experiment for the estate, the use of small barrels has enhanced its complexity without altering its territorial identity. The result is a harmonious, intense, and refined wine, designed for those seeking a characterful white that stands out at the table and during tasting.
Territory and wine style
The DOC Collio designation expresses one of the most vocated territories in the Italian wine scene for white wines. Here, Sauvignon finds an ideal context to develop crisp aromas, gustatory tension, and a recognizable mineral component. Extempore 2019 Sauvignon interprets this tradition with a more enveloping and complex style, thanks to skin maceration and aging on the lees in 5 hl tonneaux for about 9 months. It is a white with a modern profile but consistent with the territory, where elegance and depth coexist in great balance.
Tasting notes
In appearance, it presents a bright straw yellow color, enhanced by golden reflections. The bouquet is broad and multifaceted: white peach, white pepper, yellow flowers, sage, and chalk emerge, with hints of aromatic herbs and a pronounced minerality typical of Collio. On the palate, Extempore 2019 Sauvignon DOC Collio is dry, moderately soft, and very balanced, with a round sip but supported by a well-present freshness. The taste-olfactory persistence is remarkable and accurately recalls the fruity, floral, and spicy sensations perceived on the nose.
Recommended pairings
The structure and aromatic richness of Extempore 2019 Sauvignon DOC Collio make it suitable for flavorful yet elegant dishes. It pairs well with seafood appetizers, baked fish, shellfish, herb risottos, delicate white meats, and preparations based on vegetables, asparagus, or fresh cheeses. Its personality also makes it interesting with mildly spicy Asian cuisine or well-seasoned chicken and turkey dishes, always respecting its aromatic finesse.
Serving temperature
